Korean Spring Season Foods

The cold winter had passed and the warm spring has come. Spring is even more pleasant because this winter was unusually cold. However, we cannot enjoy the warm spring weather because of COVID 19. Let's relieve this boring feeling by eating delicious spring food. From now on, I will introduce delicious spring food ingredients and the food that uses them.

 

1. Shepherd's purse (In Korean : Naeng-I)

The first thing that comes to mind when you think spring is the fresh grass. These foods are very delicious. In Korea, a dish made of grass is called Greens (Na-Mul). Let me introduce some appetizers that taste good and are good for your health.

 

When shepherd's purse was laid upon the table, Koreans always say, "It's already spring." That how much, shepherd's purse is the representative ingredient of spring season. Shepherd's purse has a lot of protein, vitamins, calcium and iron. Shepherd's purse is especially good for eye health, and helps prevent fatty liver disease and lower cholesterol levels.

 

People pick and eat new sprouts because when shepherd's purse is fully grown, it’ s tough and the good scent disappears. The bitter taste and fragrant smell of shepherd's purse increases the appetite that declines throughout the winter.

 

The easiest and most frequently eaten shepherd's purse food is ‘seasoned shepherd's purse.’ (Naeng-I Mu-Chim)

In Korea, various greens are eaten by seasoned greens. The ingredients used to mix shepherd's purse is diversified. some people use red pepper paste (Go-Chu-Jang) and others use soybean paste (Doen-Jang).

 

Seasoned shepherd's purse is made by mixing red pepper paste or soybean paste with sesame oil, crushed garlic, and sesame. The second most frequently cooked shepherd's purse food is ‘shepherd's purse soybean paste soup (Naeng-I Doen-Jang-Guk).’ Shepherd's purse soybean paste soup is made by boiled soybean mixed with water, shepherd’s purse, green onion and crushed garlic together. Some people add tofu, radish, and bean sprouts.

 

2. Short arm Octopus (Ju-kku-mi)

First, I will introduce ‘Short arm octopus sashimi (Ju-kku-mi Tang-tang-i).’ When you cut a short arm octopus, you have to hit it hard with a knife. The sound of a board and a knife hitting each other is Tang-Tang. So, it was named ‘Tang-tang-i.’ After trimming the short arm octopus, cut it into bite-sized pieces without any cooking process. Short arm octopus sashimi is eaten with sesame oil and salt or soy sauce. Because it does not have any seasoning, you can enjoy the unique taste and chewy texture of Short arm octopus.

 

Next short arm octopus food is ‘Stir-fried short arm octopus (Ju-kku-mi bok-keum).’ Stir-fried short arm octopus is usually made spicy. First, make the seasoning with red pepper paste, soy sauce, crushed garlic, red pepper powder, and sugar. Put various vegetables such as onion, green onion, red pepper with webfoot octopus in a pan and stir-fry them well. If you eat spicy and sweet Stir-fried short arm octopus with rice, you can gain weight in an instant because the food is very delicious.

 

3. Manila clam and comb pen shell (Ba-ji-rak and Ki-jo-gae)

Last spring season foods are Manila clam and comb pen shell. Manila clam and comb pen shells are most delicious in spring with short arm octopus. The methionine of Manila clams helps diet and prevents anemia because it has a lot of iron. The comb pen shell is called the

 

king of shellfish because it is large and has a lot of nutrition. It especially prevents adult illnesses and helps with energy recovery. Because that has a lot of dirt, you should wash them clean and cook them.

 

First, I recommend a food that use to manila clams. Among the many manila clam foods, the most popular one is ‘manila clam noodle soup (Ba-ji-rak Kal-guk-su).’ Put green onion, garlic, red pepper, onion, pumpkin, and carrot in manila clam broth. Season with soy sauce, salt, and pepper and add noodles. Then the manila clam noodle soup is complete.
